Roasted Sweet Potatoes & Brussels Sprouts

Ingredients:

-Brussels sprouts (1lb)
- Sweet potato (1lb)
- 1/4cup Green Olive Co. Garlic Olive Oil
- 2tbs Green Olive Co. Pomegranate Balsamic vinegar
- 1tsp salt
- Pepper to taste
- Fresh thyme & pomegranate seeds to garnish

Method:

Except for the fact that this recipe is very delicious and healthy, it is also very easy to prepare! Another strong point! All you have to do is prepare the necessary ingredients!

- Preheat oven to 425'. In an oven-safe dish, toss together brussels sprouts, sweet potatoes (chopped into 1-2" pieces), garlic olive oil, pomegranate balsamic vinegar, salt, and pepper. Stir to coat.

- Roast for 30-40 min, turning halfway through until browned and a fork easily slides in.
